Satisfying a Mexican Food Craving

I have been craving Mexican food for the past few days. It could have been the loud crackling of a hard taco shell or the soft doughy taste of the burrito and cheese melting in my mouth creating these desires. Whatever it is, I have wanted it really, really badly. It was so bad that I even considered serving Taco Bell for dinner. I believe it would have been acceptable to do considering it is Super Bowl Sunday and everything. It doesn’t get any easier; go through the drive through, place my order, and Voila, dinner is ready.

I was really feeling it because I was a little lazy tired and getting into my warm and comfortable pajamas was on the top of my mind. Despite this, I just could not do it. It is a sad testament in life (at least in mine) when Taco Bell suffices and becomes the best offering I have for authentic – or as close as I can get - Mexican food.

I shook off the fast food fever and decided to head to the store, pick up a few items, and make my own food. A black girl making Mexican food has to be just a little bit more authentic than Taco Bell putting everything together.

Although my decision was a good one, searching for tortillas and nacho chips 45 minutes before the Super Bowl game starts is not such a great idea. The shelves were just about empty, but I was able to find a few items to complete our dinner. All I really wanted were some hard shell tacos.

As you can see, I got my tacos. Dinner was a little bit healthier, we have some leftovers, and I even got my accent of cilantro. Does Taco Bell use cilantro?

After dinner, I was finally able to get into those comfortable pajamas and enjoy the rest of my evening with a full belly and a craving satisfied.

I’m not making fun of anyone (hee, hee) because I did not really care who won – missing the 49er’s, Eddie DeBartolo, Jr., Bill Walsh, Joe Montana and even dare say Steve Young - , but I always love it when the underdog surprises the people. Congratulations New Orleans! I know Harry must be proud.

    All I can say is yummy! I made some black bean and cheese quesadillas on saturday.
    I’m not a football fan but I was rooting for the Saints.
