Pumpkin Pie to the Rescue

It is a little bit before midnight and I just finished off my last piece of pie for the evening. Although I didn’t, I probably could have eaten the entire pie myself because it sure was good. This was my first attempt at making pumpkin pie and it happened by default. The original plans for dessert were Lemon Ice Box Pie and Chocolate Chip pan cookies. Well, I didn’t have the condensed milk or chocolate chips and the idea of making a second run to the grocery store didn’t sound like fun; pumpkin pie! The only thing I will change the next time is that I will make my own crust.

    I am a sweet potato pie person although I will take pumpkin any day. I just made your lemon ice box pie a couple of weekends ago when Misty was in town. Love that recipe! Thanks for sharing.

    I made my very first Pumpkin Pie last year. It is not something you come across in Australia or New Zealand. We tend to eat pumpkin as a vegetable with our roasts, and pumpkin soup is very popular. Anyway, a friend highly recommended a microwave, yes microwave, pumpkin pie recipe and so my Miss 9 decided we simply had to make it. I was so apprehensive but WOW Jennifer, I am so glad I did, it was so, so yummy (and easy). Even Miss 7 and hubby who aren’t pumpkin fans loved it.

    Hmm, microwave…that sounds very interesting. You may need to pass that recipe on so I can try it.

    Also, when you do eat pumpkin as a vegetable, do you carve/cut the pumpkin or buy it already cut? I wanted to make pumpkin pie out of our pumpkins that we got at the pumpkin patch, but wasn’t sure if the flavor would be good.

    Ack! Why is everyone posting about the delicious things they are making and eating? I’m craving cinnamon rolls, apple pie, cupcakes, and now pumpkin pie! I’ve never made pumpkin pie before, but have made pumpkin cheesecake (which was goooood). Never have had sweet potato pie before. Happy New Year!
